I meant to post this a week ago, but I’ve been busy! So now it’s March 18th and I’m finally getting this up:
These are some St. Patrick’s Day sugar cookies that I made for a party. I had fun decorating them and it really got me into the “green” spirit!
For the same party I made vanilla cupcakes with vanilla buttercream. I also made little fondant shamrocks to put on top!
After making these, I decided to celebrate St. Patrick’s day by making one of my favorite sandwiches–the Reuben. I roasted a corned beef brisket yesterday and then let my husband do the rest of the work! Grilled pumpernickel bread topped with sauerkraut, thousand island dressing and sliced corned beef (with a side of salt and vinegar potato chips.) Yummy! It made me miss JT’s in Borger, TX!
For some unique flavors for St. Patrick’s Day (or anyday) cupcakes, you can try these Guinness Cupcakes with Bailey’s Irish Cream Buttercream or these Key Lime cupcakes . (I supose you could always add green food coloring for St. Patty’s day!)
